raw versus cooked meat / fat

i 've been eating all my meat / fat raw for several years now. i live in hawaii, where local grass-fed beef is $3 a pound.
i eat a pound of it, almost every day, and always look forward to it. i've researched the health differences between raw
versus cooked meat, but in usual internet fashion, have gotten every answer under the sun. all i know is that my body
really likes raw meat / fat, great digestion. my taste has adjusted so that i greatly prefer it. cooking really changes meat.
a question for js is, what can you say about the health differences between raw and cooked beef / fat ?
also, i just read in your forum about good recipes for liver. i really don't like cooked liver - it's gray, and it smells like liver.
raw liver is similar to kidney - reddish brown, tender, and no smell. grass-fed only though. love your work js.

As far as I know, the only disadvantages of raw beef are:
1. Potential contamination with bacteria/parasites/etc.
2. Many cuts are quite tough!

I don't know of any other reasons not to eat raw beef -- so if you're confident in your sources, I say go for it! (Note that raw chicken is a bad idea AFAIK, as is raw pork.)
